• Day 2. Rice stuffed peppers with red pesto sauce.

A little bit more difficult to make but oh so worth it. You need a steamer pot for it. Here are the ingredients: 1 pouch of cooked rice per two peppers 6 bell peppers 3 celery sticks Red pesto 1 spoon of flour and 6 spoons of water 1 spoon of vegetable gravy handful of spinach oil to fry salt and pepper foe seasoning Method Cut the top out of peppers, then scoop out the seeds. Open pouches of rice. Cop celery and it fry together with rice and spinach on hot oil until soft. Fill peppers with rice and place it on the steamer. Cook until soft. Mix flour…

  • DAY 1. Polish potato pancakes – ‘Placki’

Welcome to Veganuary, everyone! I’m Polish so I can’t think of a better way to start 2020 than cooking something traditional. Placki, which are (sort of) Polish potato pancakes seem to be the perfect choice: easy to make and super duper tasty. I made them vegan style for the first time today and I can assure you: they taste DELICIOUS! You need: 8 medium sized potatoes (circa 1 potato gives you 1 medium sized placek) 2 red onions 2 spoons of egg replacer 1 spoon of semolina half cup of oats half cup of any vegan milk some chopped chive salt and pepper to taste Neutral flavour coconut oil (for…

  • Merry Christmas / Wesołych Świąt!

This year I decided not to buy a christmas tree (I used to buy one which I could plant but for some reason they always died…). This year I brought an olive tree from my greenhouse and decorated it accordingly. It looks ace, have a look. Lovely people – have a gorgeous, joyful Christmas. Be healthy, be happy, be loved. Bądźcie zdrowi, szczęśliwi…Kochajcie i bądźcie kochani. Wesołych…

  • My vegan journey

I have been a carnivore all my life. I ate meat, cheese, junk food, healthy food, I wasn’t fussy at all. There weren’t many (if any) dishes that I would dislike. I had a few operations in my life thinking it was normal (things like that happen, don’t they?) and I thought I took care of my health.  What it meant to be healthy I realised only once I started eating like a vegan at first. My husband loves health / nature programs and I can assure you I have my daily dosage of some essential info from him, but it wasn’t him that convinced me I should do it.…

  • Apple crumble

Little apples from our dwarf apple tree are super extra sour but so delicious in a home made apple crumble! This year we had about 14 apples, much more than the previous years and it’s connected with my effort of inviting more bees into our garden. My plan for this year is to purchase a little beehive and a queen bee larvae to start my own little beehive in the back garden. Not for honey, just for a safe haven for the species and for my apple tree to benefit from it as well. I know absolutely nothing about bees, so I need a proper research before I make the…

  • Border Collie for a border collie

So it happens that I’ve got a very talented mothers (both my own and  in – law). She is not only an absolutely adorable, sweet woman but she knits like a pro! I’m absolutely obsessed when it comes to handmade presents. it is something my mother has always given me since I was a little girl. Handmade gifts were the most precious of them all and they still are, even more so. Therefore, every Christmas, birthday and occasionally without an occasion whatsoever I am being spoiled with all some beautiful treats from my own mother as well as Ann. Here is her rendition of a border collie, Dj  isproudly modelling.…

  • Glamping!!!

Right… Let me start by saying, we didn’t want to go on holiday without DJ. We wanted to take him along, so we googled the best way of bringing the four legged companion along on our hollies. Turns out “glamping” is the best. “Glamping” refers to “glamorous camping” and defines places where you can stay (with your pet or without) in some totally secluded places. Think “camping in the middle of the woods”, “close to the cliffs at the seaside”, etc. We chose to go to Mid and South Wales and stay in a caravan (and one night in a hotel) that allows dogs. MY GOD WHAT A FANTASTIC IDEA…

  • Frisbee mad

If he could, he’d spend 24/7 on catching that “orange pancake” as my father jokes. Django is totally, utterly, absolutely frisbee obsessed and I’m more and more amazed at somersaults and jumps he tries while on his walk. Is there a frisbee catch competition or something? I should check it out, I guess…

  • I’m a swimmer!

At first we thought there is simply no chance to get Django into water. He was fearing it a bit as a pup and he wasn’t keen on it at all. Until the moment, where there was a little bit of flooding near his favourite frisbee field which created a mini – lake. I put my wellies on and tried to throw his frisbee into the pool of water, standing in the middle of it myself, so that he knew it was safe. He wasn’t sure at first but then… it was no stopping him. He loved it and has been obsessed with water ever since! This was a major…

  • Pickled maple samaras

If you haven’t tried pickled “fruit” of maple trees, you’ve got to do it next year. It’s perfect for sauces, canapés and simply ideal as an early autumn comfort food. You need: a handful of maple samaras glass or two of mineral water (depending on a jar size) bay leaf three slices of lemon teaspoon of sea salt (foto credit: Krzysztof Ziarnek) They taste like pickles mushrooms but are a little bit more spicy. Boil water with salt. Cool it down to room temperature. Place samaras at the bottom of the jar, add lemon, bay leaf and fill with water (not to the full, 3/4 will absolutely do it). Jeśli…

  • Greenhouse Zenhouse

Ok, let’s face it. We didn’t get the greenhouse just to grow the veggies there, oh no. No! We got it, so we could WATCH the veggies grow. And if you want to watch your plants, fruit and beg grow, the best way to do it is to make it all “zen”. Paul got me an olive tree (giant, gorgeous one!), I got myself some shelves and sorted! Time for relax now 🙂

  • Fermented barszcz for anaemia

I cured my anaemia with drinking  1/3 of a glass of fermented beetroot juice (barszcz) on empty stomach each morning for 3 months. I tried molasses with lemon juice (also a great remedy) but barszcz seemed to work much faster. Its garlicky taste is heavenly, although for many it may be way too strong. My husband finds it too challenging:-) All you need is: 4 beetroots (washed and chopped into pieces) 3 garlic cloves (peeled) boiled water, cold a handful of mixed fresh vegetables: carrots, parsley and celeriac root crust of brown bread (cut it off one slice) a few straws of thyme, basil and dill pinch of salt bigger…
